While raw eggs keep for 28 days, they can be kept for about two to four weeks when cooked and stored in the refrigerator. On the other hand, foods prepared with raw eggs, such as tiramisu, mayonnaise, or sugar egg, should also be kept in the fridge for 24 hours to prevent salmonella infection. You should also only use fresh eggs if possible. Untreated and separated, we can save raw egg yolk and egg white in the refrigerator for about two to three days.
In countries like the USA and Canada, eggs must be kept refrigerated in the supermarket. In some European countries, however, eggs are also washed after laying, which destroys the natural protective layer of the product. Accordingly, we can no longer sell eggs in the store without refrigeration for hygienic reasons.
What is the best method to store eggs?
Eggs are foods that provide the human body with valuable nutrients. They provide high-quality protein, easily digestible energy in the form of fat, numerous vitamins, and the substances choline and lecithin, which are indispensable for building cell walls.
The longer you store your eggs, the more vitamins are lost. Our mothers and grandmothers kept eggs in the pantry or kitchen cupboard. Today, every refrigerator door has a holder for eggs. But this is unnecessary.
Why do eggs stay in the fresh air?
About 10,000 pores run through the shell of a chicken egg. These pores give the calcite crystals in the round a grid-like structure and act as a respiratory organ. When an embryo develops in a chicken egg, about six liters of oxygen, eleven liters of water vapor, and four liters of carbon dioxide pass through the pores to the outside.
An intact eggshell is getting covered with a thin layer, the cuticle. It prevents germs from penetrating the egg and protects an unchilled egg from spoiling for about 18 days. Water destroys the skin. Since brushed hen’s eggs are getting sold in some countries, you can store your eggs uncooled.

Why can’t we interrupt the cold chain?

Even if you buy your eggs uncooled: storing them in the refrigerator preserves vitamins from light and oxygen.
Important: Store eggs with the pointed end pointing upwards because that is where the air bubble is. If you place the eggs the other way round, the air bubble will move and detach the egg skin, raising the risk of bacteria entering the egg.
How long can eggs be stored?
The official best before the date for fresh eggs is 28 days after laying, and it does not suggest that you have to throw away eggs after this date. We should heat old eggs to at least 70 degrees to make them safe for consumption. Mature eggs are therefore suitable for cakes or salty baked goods. Before mixing the eggs into the batter, break the shell open and smell them. You can easily recognize rotten eggs by their sulfurous smell.
You should not take any risks if you want to eat eggs raw – for example, in mayonnaise, tiramisu, or tartar. In this case, it is advisable to buy eggs from a well-known manufacturer and consume them immediately.
Where is the best place for eggs in the fridge?
The holders for eggs in the fridge door are the right place for this food. You must keep your eggs separate from other foods. If you open your fridge frequently, it is better to keep your eggs in a carton, protecting them from light.
